About Momos
The undisputed street-side staple of the Himalayas; these high-precision pleated dumplings are stuffed with minced water buffalo or mountain vegetables seasoned with ginger and garlic; the 'insider' secret is the accompanying 'achar', a spicy; tomato-based dip enriched with toasted sesame and Szechuan pepper (timur).
What a Momo Is
A momo is a pleated dumpling of soft wheat-flour dough wrapped around a seasoned filling and cooked by steaming. The classic Kathmandu filling is minced water buffalo bound with onion, garlic, ginger and coriander, though chicken and finely chopped vegetables are common. Each piece is folded by hand, either into a round purse or a half-moon kothey shape.

From Tibet to the Valley
The dumpling travelled into Nepal with Tibetan and Newar traders who crossed the Himalayan passes, and it settled most deeply in the Kathmandu Valley. Newar cooks adapted it to local spice and to buffalo, the meat of choice in the valley. Today it is sold from glass-fronted carts, tea stalls and sit-down momo houses across the country.
The Achar Decides Everything
A plate of momos is only as good as the achar served beside it. The standard dip is a loose, brick-red sauce of blended tomato, toasted sesame, dried chilli and garlic, sharp and a little nutty. Cooks guard their achar recipes, and regulars choose a stall for its sauce as much as its dumplings.
How It Is Eaten
Beyond the plain steamed version, the valley serves jhol momo sitting in a spiced sesame broth, fried momos with a crisp shell, and fiery C-momo tossed in chilli. Momos appear at every hour, from a mid-morning snack to a late dinner, eaten with the fingers straight from the steamer tray.
